On September 22 we celebrate Hobbit’s Day! This year we made a creamy potato soup that is soul satisfying, filling enough for Smaug the dragon and precious even if Gollum doesn’t understand.
Hobbit Potato Soup

Ingredients
- 1 can cream of corn
- 1 can cream of potato soup
- 1 cup chicken stock
- 1 cup of hot milk
- 2 tbs flour
- 1 stick of butter (cut into 5)
- 1/2 brick of cream cheese
- 5 baking potatoes (peeled and quartered)
- 1 tbs salt
- Pepper to taste
Instructions
- Place potatoes in boiling water for 15 - 20 mins. The goal is to get them very soft.
- Drain off all but two cups of the potato water. Add chicken stock
- Use an immersion blender to smooth the potatoes
- In a separate pan melt butter, then add flour, and salt until it is thick
- Slowly add hot milk to the mixture and add to the potatoes.
- Add cream cheese in small amounts and whisk well
- Heat and blend well or whisk until the soup comes to a boil. Reduce heat to simmer.
- Add cream of potato soup and stir well
- Add cream corn and stir well
Notes
Garnish with crushed bacon, sour cream, chives, or your favorite croutons / bread
