Ingredients
- 8 oz Cream Cheese
- 1 cup Sliced Cucumber (Optional: seed them by cutting out of the center)
- ¼ cup Chives, minced or finely chopped
- 1 tbsp Mayonnaise (not Miracle Whip) (Optional: increase to 2 tbls for creamier spread)
- 3 tbsp Dill, chopped finely
- ¼ tsp Salt
- ¼ tsp Ground Black Pepper
- 10 Bread (White is traditional but any soft bread is acceptable)
- 3 tbsp Mint, freshly crushed
Instructions
- *Trim the bread of crusts using a sharp knife. Set aside.
- *Combine all other ingredients except the cucumber in a bowl. Mix with a spatula until thoroughly incorporated.
- *Gently add the cucumber to the mixture.
- *Spread the mixture on the bread in a thick layer. Cover with a second slice of bread and cut into triangles.
- *Sprinkle very lightly with crushed mint
