Nightmare of the Wolf Honey Cakes – The Witcher Recipe
I knew this would be a tough recipe to get, but I had no idea how tough. The Witcher – Nightmare of the Wolf is a gritty anime that is supposed to explain how Vesemir (Geralt’s mentor) became the world weary man we know him to be. The world he lives in is rough and filled not just with peril, but with comforts that are costly. Young Vesemir leans early that some creature comforts are worth risk, and honey cakes are his ambrosia. What made this recipe hard was balancing what you see as a perfect yellow cake, with what I understand as the limitations of ingredients on the Continent. The first honey cake he steals from a market looks like street vendor food.
Honey cakes are uniquely simple by nature, but they can also be dry and tasteless if you aren’t careful. BAKING TIMES AND TEMPS ARE IMPORTANT! We made this recipe numerous times with changes to the batter, amounts of ingredients and cooking temps. It took many tries to hit on something soft, moist and with flavor that wasn’t just a sweet cake biscuit. Once we got the right recipe in place, the cake was gone in a few hours.
We think even the Countess would offer this recipe to her orphans.
This was a really difficult recipe to get "just right". Most honey cake recipes are too dry and honestly the texture is a big turn off. It is easy to overbake this recipe, but after playing with the basic recipe for honey cakes, we discovered that extra butter, and more sour cream was the winning combination and didn't end up being dry. NOTE: We also used lemon extract and lemon zest to one cake (eliminating the vanilla) and it made a bright citrus flavor honey cake.
NOTE #2: Honey choices: Use a wildflower honey or something other than clover honey. We used Macadamia Nut Blossom honey and it created a fragrant, slightly bolder, honey taste.
